My Monday Dinner...

My Dinner. 

After a long, fun, interesting weekend cooking dinner on a Monday night is one of the few things that I know will help relax me a little. Every night I try and cook something different for dinner, to switch things up and keep my taste buds in check. I cook meals ranging from steak, to baked potatoes, to just mac and cheese. No matter the dish, I always love it. I seem to be loving new things so I am making sure to spice things up a bit. Well, tonight was kind of plain. All I made was barbecue chicken and broccoli. A little boring, but it went a long way.

First, I make the barbecue chicken. How I do this is by purchasing chicken at the Giant located on 1020 W 41st Street Baltimore, MD 21211 and I buy thin sliced chicken breasts. I do not like to have thick chicken or big cut slices so I slice my chicken into extremely small pieces. After my chicken is cut into the perfect shape and size I then put my honey barbecue sauce on and sauté the chicken. I grab a medium sized bowl dump the chicken in pour the sauce in and mix it around until the chicken looks nice and perfect.

When the chicken looks perfect, I lay each piece out on tinfoil on a oven matt. Then I pre-heat the oven to 425 degrees and after I her the beep of it being ready, I put the chicken in for about 25 minutes. Being that the chicken is sliced so small I check on them every so often in case they begin to burn. When the 25 minutes is up, I take it out and make sure the inside is white and not a pink color.

When the chicken is ready I keep it lying in the oven so it stays warm. I then move onto the broccoli. Broccoli is actually, by far, one of my favorite foods. I could eat it with any meal whether it is with breakfast, lunch or dinner. I make my broccoli different than one would think. I do not fry it, I do not boil it, I do not steam it- I put it in a pan and cook it. First, I get a cutting board out and cut my broccoli into smaller pieces so it is quick and easy to chef up. After all of the broccoli that I want to use is chopped up, I throw it in a pan.

So, like I said, I do not cook broccoli like any other. After it is all in the pan chopped up I season it all. I. drizzle a little olive oil over the broccoli, first, and mix it all up. After that I sprinkle some salt and pepper on top, of course, for some flavor. When it seems to be becoming soft and ready I add in garlic powder. The garlic powder, let me tell you, is definitely a game changer. The taste that it gives off is magical and it is my favorite part. Once the broccoli is all seasoned and is softened , it is ready to be eaten.

When the broccoli was all ready I added it into a bowl with my barbecue chicken. I mixed them together, poured a glass of water and called it a day. A nice and healthy meal to start my week.
